Cupcakes!

I made these beautiful little cupcakes last night. I made the teeny tiny decorations and covered them in delicious butter icing! Believe me - they are yuuummmmy!

Its just a simple lemon sponge cake (4 eggs, 8oz s.r.flour, 8oz butter, 8oz sugar, 2 tbl spoons lemon juice - sounds alot but you do get 24 cakes in one batch!) and a quick butter icing mixture (3oz butter, 6oz icing sugar, 2 tea spoons lemon juice) and any decorations of your choice. I chose to make mine using sugar paste and colourings. I actually made these decorations using a straw, but you can get a whole load of different sized and shaped cutters. To be honest, I like the rustic look!

I've started taking orders from people, so half of these are for a friend of a friends birthday! (The picture to the right is just a close up of some of the cakes for her, her name is written on the stars in the middle of the board)
